I'd love to assign tasks to clients that I'm waiting on to complete the next step, for example: provide copy for about page. This will help both client and myself see what's holding up a particular step in the project.

Yes, 10,000x. More broadly, clients should be a user-role/Indy account, and be able to see tasks, milestones, files, etc., as long as they are added to those items.
